Velveeta cheese was a staple in our house when I was growing up in the 60″s and 70's. My mother used it for everything: grilled cheese sandwiches, casseroles, her cheese soufflé, etc. I have no idea what the ingredients were back then, but today, there are 21 ingredients, and most of them are chemical names and very little dairy. You may ask why I am bringing up this subject, and to be honest, I wasn't even thinking about Velveeta, but there have been videos popping up on the internet about people making a homemade version without all the junk ingredients. I'll be honest, some of the ingredients they were using weren't much better than the product itself, so I set out to make my own version, using clean ingredients (junk-free).

I was honestly shocked that it worked, but it did. As a matter of fact, it tastes better than the original. I will be making lots of this and sealing it in my food saver and freezing for a rainy day
