This broccoli salad has always been a summer favorite. The first time I ever had it was many years ago in my youth when there was a gathering at the swim club that my mother and I belonged to. Somebody brought it as a potluck, and it was wonderful.

Many years later, I was hankering for it for some reason, and I just started throwing some stuff together and hopefully replicated it the way it was because it was delicious. I offer you this as the first salad of the summer. Summer has always been a time of non-stop salads for me so here's one that I enjoy and I hope you do too.

Italian Broccoli Salad

Descriptions

This is a very simple salad with very few ingredients. I put broccoli in it but in the past I've also used cauliflower or any other raw vegetable you want to throw in there; it goes with everything. Also some cut up green onions on top sometimes are good too. You can add whatever you want, subtract whatever you want; it's very versatile and enjoyable.

Directions

Step 1

Cut and combine cheese, pepperoni, onion and broccoli.

Step 2

Stir in EVOO, balsamic vinegar, and seasoning. Chill and serve

Note's

I like to use turkey pepperoni in my salad. I also use the mozzarella cheese that's either pesto or some sort of seasoning already put in it, but feel free to use whatever you want and experiment and find out what you like best.
